Middle Eastern cuisine cooked underground
Thousands of years ago, ovens were not carved from rock or shaped by clay they were dug into the earth. Commercially, such a method seems unpromising, but The Earth Oven, a restaurant that opened Wednesday (June 19), has pulled the method from the Stone Age into the digital age.
After the closure of Taos Cafe, formerly known as Plant Base Cafe, John Sinon started moving into the space with his concept for Middle Eastern and Mediterranean food cooked in an underground oven.

The Earth Oven Restaurant
Middle Eastern restaurant The Earth Oven uses other traditional Mexican barbacoa underground ovens, which cook tender, melt-in-your-mouth slabs of meat (choose from pork or lamb) with a smoky finish. And don't skip delicious sides like cauliflower tahini and tabouleh. Enjoy your meal at a picnic table on the shaded patio—the perfect spot for sipping a glass of wine. Closed Tuesdays and Wednesdays.

How chefs and restaurateurs are reshaping the town's culinary landscape
Summer in Taos has a way of calling people to the table. The days stretch long and bright across the valley, and the trails and galleries seem to fold naturally into late lunches, slow dinners and conversations that carry on past sunset.
This year, a handful of new and reimagined restaurants are adding their own voices to the town’s rhythm — places that feel stitched into the land and history of Northern New Mexico, but that also aren’t afraid to look outward and forward.
